Sweet Potato Casserole

Doubled in 2026 so it finally fills a 9x13 the way it should. The original recipe made a shallow pan in a dish built for twice that, which is why it never matched the other sides on the line.

Ingredients

  • 4 cans (15 oz) sweet potatoes, drained
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup milk
  • 4 eggs, beaten
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp salt
  • 1 cup butter, melted
  • 2 cups marshmallows, optional topping

Directions

Do not put the marshmallows on at the start. They will burn long before the centre sets. They go on for the last five to ten minutes only.

  1. Heat the oven to 350°F and grease a 9x13 pan.
  2. In a large bowl, mash the drained sweet potatoes until smooth.
  3. Add both sugars, the milk, beaten eggs, vanilla, cinnamon, nutmeg and salt. Mix until fully combined.
  4. Stir in the melted butter until smooth.
  5. Pour into the pan and spread it even.
  6. Bake 40 to 50 minutes, until the centre is set and no longer wobbles when you nudge the pan.
  7. If using marshmallows, scatter them over the top now and bake 5 to 10 minutes more, just until puffed and golden. Keep an eye on them, they colour fast.

Then park at First Presbyterian and come eat with us.
